Cebiche!
One of the favorite foods of Trujillo and much of Peru is Cebiche. It is made of raw fish and seaweed mixed with lots of lemons and onions (which supposedly "cook" the fish), and then garnished with lettuce, fried kernels of corn, and a decorative hot pepper. Word to the wise- don't eat the pepper unless: a. You love having a burning sensation permeate your entire body, or b. You want to make sure the fish is "cooked" inside of you.
